‘Tasting Georgia’ is back with new recipes!

Get a taste of the Caucasus with a special 3-hour brunch where we’ll teach you how to prepare simple and delicious dishes, followed by a tasting of wines from the cradle of viticulture. 
In recent years, more and more people have become aware of the rich culinary tradition of this mountainous region of Eastern Europe, for centuries a gateway between east and west. Georgian native Lile will tell you about her home country, famed for its unique spices, healthy but tasty vegetable based pastes and other exotic dishes.

MENU
You will learn how to make 2 typical Georgian starters, Pkhali and Badridzhani and a main course, Chicken Kharcho. We’ll also prepare the secret weapon of Georgian cuisine, the spice mix known as Khmeli-Suneli, getting your own mix to take home. Last but not least, we’ll try Georgia’s mouthwatering cheesebreads, Khachapuri.

WINES
Once the cooking is out of the way, Barcelona based sommelier and wine consultant Nika will introduce you to the world of Georgian wines, one of, if not the most ancient wines made in the world. 
We’ll be tasting:
- 1 white, aged in traditional terracotta kvevri pots
- 2 different styles of reds, made with local grape varieties

ABOUT US 
Originally from Georgia, Lile Sekaniya is a qualified yoga instructor & international wellness events organiser, interested in how food affects our moods and well being. She also comes from a long line of cooks, and is likely to regale you with stories about her Grandma. 
Nika Shevela is a sommelier, wine communicator and consultant originally from Rostov in southern Russia. With years of experience in languages and tourism as well as an impressive knowledge of Spanish and international wines, she’s the perfect and affable guide to the wonders of Georgian wine.

Manila de Verdeverdementa nos propone un ciclo de talleres de Cocina Italiana Natural, basada en ingredientes de origen vegetal, de temporada y de proximidad. Utilizaremos algún queso artesanal, cuando la receta lo requiera (prescindible para veganos e intolerantes). Una manera original, sana y divertida de combinar cereales y harinas, legumbres y hortalizas, fruta, frutos secos, aromáticas, plantas y flores silvestres.


ABOUT

Manila es italiana, de origen siciliana, nacida en Holanda. Vive en Cataluña desde hace 15 años. En la cocina se mueve desde la intuición, el respeto por los ingredientes y la creatividad. Le apasiona experimentar y jugar con aromas, texturas y colores, para crear platos originales. Por otro lado, le encanta la cocina tradicional, su gran riqueza y su historia, base desde la cual se orienta en la cocina.

 Tagliatelle caseras con crema de brócoli, perejil, almendra y crujiente de Parmigiano

Reggiano

 Fusilli de espelta con col lombarda, alubia blanca, zeste de limón y avellana picada.

 Bavette de trigo duro y remolacha espiralizada al vapor con pesto de pistacho y calabaza.

Aprenderemos a hacer tagliatelle caseras con una masa sin huevo. Hablaremos de las diferentes harinas que tenemos a nuestro alcance para elaborar la pasta fresca. Aprovecharemos para repasar el proceso de cocción de la pasta. ¡Disfrutaremos mucho combinando vegetales y jugando con texturas y colores!

Have you ever had the desire to learn how to make these wonderful fermented foods at home only to be put off by how difficult and complicated they can seem to be? Then this workshop may be for you.

- Sauerkraut with beetroot and cabbage.
- Kimchi (Vegan)
- Fermented cashew cream cheese.

We will finish the workshop with an abundant tasting of all of the above on HOMEMADE AREPAS! (a delicious South American corn bread). You will not leave hungry.

You will leave the workshop with your own small jar of sauerkraut to take home and look after for a couple of weeks until it ferments! Hope to see you there!

DYE & DINE - A Natural Dye Class and Dinner.

On Sunday the 9th of December from 17.00 - 22.00 Bear on Bike and Marble Matter invite you to explore the relationship between dyeing and dining. 

Traditionally most food scraps have been used to give textiles beautiful color. Trying to shed light upon this circular approach to waste, we have created an event where you will dye tableware using the food scraps from the the dinner you will later enjoy. 

The Natural Dye Class

We start the afternoon with a two hour natural dye class. You will learn the basics of natural dyeing and where to source dye stuff in your local environment. During the class we will work with onion, avocado and pomegranate, each ingredient representing a dish from the dinner menu. Using the peels and pits we will create natural colors and patterns on two raw silk table mats and one small table runner.

After we finish the workshop you can relax while enjoying a three course meal accompanied by wine, all prepared by the great chefs Ella and Alberto from Bear on Bike. (Menu details will be posted soon).

Cocina Sostenible: Pizza Auténtica Minimizando los Residuos

En este taller vamos a aprender a preparar una verdadera pizza de masa madre.

Empezaremos con un poco de teoria sobre las harinas que hay que utilizar, el aceite y el agua, donde comprar los ingredientes, utilizando menos plástico posible, los tiempos de fermentación y de cocción. 

Aprenderemos como preparar y mantener la masa madre.
Para luego "mettere le mani in pasta" y que cada uno prepar su propia pizza.

También prepararemos algunas salsa y os enseñaremos como hacer un cremos queso ricotta, que le darà un toque especial a la pizza.

La clase estará impartida por los cocineros Alberto (Italiano) y Ella (Australiana) de Bear on Bike. Con un enfoque en ´slow food´ usando ingredientes locales, de temporada y ecológicos, y trabajando hacía una cocina sin desperdicio..

El curso incluye todo el material, más un kit de pizza:

This workshop is for everybody who wants to learn how to prepare a sourdough pizza from scratch.

The workshop has a theoretical and a practical component, where we explain which flours to use, how to buy in a sustainable way the ingredients, using as less as plastic as possible, the cooking times and other tips so as each participant will prepare their own pizza and starter.

We also going to cook some sauce and a homemade ricotta cheese to make the pizza delicious.

The class will be lead by cooks Alberto (Italian) and Ella (Australian) of Bear on Bike. With a focus on ´slow food´, they use local, seasonal and organic ingredients, and work towards a no-waste kitchen.

Mike is back again with his monthly VEGAN PASTA MASTERCLASS! The masterclass has been such a hit and we love doing it so much that it is starting to become a monthly event! :)

Mike is a traditionally trained vegan chef. Mike started his career at Jamie Olivers Fifteen where he learnt how to cook all sorts of Italian classics and more importantly where he fell in love with the art of fresh pasta making and the importance of fresh ingredients.

Nearly 8 years later and Mike is rediscovering his love for fresh pasta making, taking all that he has learnt in the many different styles of cuisine he has worked in since then.

Mike challenges the view that fresh pasta dishes needs to include eggs and dairy by creating truly tasty vegan pasta dishes that do not compromise on flavour!

Thai Together is offering a 3-course Thai cooking class where we will teach you how to make a mouthwatering salad, curry and dessert while you also have an opportunity to connect with new people over a glass of wine. 

Liz Kalnin of Thai Together and a Chiangmai native, will explain the unique blend of flavours that characterize Thai food, and how the importance of balancing tastes is at the heart of Thai cooking. She will describe how other salad and curry variations can be made with some small adjustments to the recipes.

The class will be hands-on so you will be guided throughout your making of these simple and authentic dishes. You will also learn tips of where Thai ingredients can be found in Barcelona and practical techniques to use when preparing Thai food.

‘Tasting Georgia’ is back with new recipes!

Get a taste of the Caucasus with a special 3-hour brunch where we’ll teach you how to prepare simple and delicious dishes, followed by a tasting of wines from the cradle of viticulture. 
In recent years, more and more people have become aware of the rich culinary tradition of this mountainous region of Eastern Europe, for centuries a gateway between east and west. Georgian native Lile will tell you about her home country, famed for its unique spices, healthy but tasty vegetable based pastes and other exotic dishes.

MENU
You will learn how to make 2 typical Georgian starters, Pkhali and Badridzhani and a main course, Chicken Kharcho. We’ll also prepare the secret weapon of Georgian cuisine, the spice mix known as Khmeli-Suneli, getting your own mix to take home. Last but not least, we’ll try Georgia’s mouthwatering cheesebreads, Khachapuri.

WINES
Once the cooking is out of the way, Barcelona based sommelier and wine consultant Nika will introduce you to the world of Georgian wines, one of, if not the most ancient wines made in the world. 
We’ll be tasting:
- 1 white, aged in traditional terracotta kvevri pots
- 2 different styles of reds, made with local grape varieties

En este taller vamos a aprender a preparar una verdadera pizza de masa madre.

Empezaremos con un poco de teoria sobre las harinas que hay que utilizar, el aceite y el agua, donde comprar los ingredientes, utilizando menos plástico posible, los tiempos de fermentación y de cocción. 

Aprenderemos como preparar y mantener la masa madre.
Para luego "mettere le mani in pasta" y que cada uno prepar su propia pizza.

También prepararemos algunas salsa y os enseñaremos como hacer un cremos queso ricotta, que le darà un toque especial a la pizza.

La clase estará impartida por los cocineros Alberto (Italiano) y Ella (Australiana) de Bear on Bike. Con un enfoque en ´slow food´ usando ingredientes locales, de temporada y ecológicos, y trabajando hacía una cocina sin desperdicio..

En este especial evento de degustación, los anfitriones Melissa Leighty (Ataula) y Robert Ruiz Moreno (Kami de Deus) darán a los participantes una introducción en el fascinante mundo de las hidromieles. Juntos ofrecerán una degustación de cinco con diferentes perfiles y sabores (con y sin gas) elaborados por el Instituto de Cerveza Artesana así como una breve introducción a su única historia. Do you love pasta? Have you ever thought about making a special fresh pasta dish to surprise your family and friends? If you are a passionate foodie, a pasta lover -or both!- and you have the desire to be able to cook fresh pasta at home, we have a plan for you!

This September Mike of Umami Barcelona will be sharing his expertise with a unique workshop on how to make fresh pasta at home!

He will teach you the recipe for the amazing pasta dough they have been serving at their umami dinners. A unique egg-free recipe that delivers a strong, reliable and versatile dough that will allow you to make different kinds of pasta; from tagliatelle -noodle type- to filled pastas like tortelloni, cannelloni and even lasagna sheets.

At this workshop you will learn how to make:
* Fresh pasta dough;
* Tagliatelle
* Tortelloni -and other filled pasta shapes;
* A delicious creamy and cheesy pasta sauce.
* Plus you will leave with one of Mike's tasty ravioli filling recipes to try at home!

For the most part, the workshop will be a demonstration by Mike, however we look forward to everyone joining in and participating in the making of the pasta.

After the workshop, we will we will cook the pasta we have prepared (plus some extras we will bring) and share a TASTING together. We love to save some time before the end of the night to enjoy each others company and the wonderful, starchy miracle we have just made.

What will be offering is something different to anything being offered on the Barcelona vegan scene; we promise a high level of well thought out, true slow food, made with love and served with passion and mindfulness. 

THE MENU
The night will consist of 4 courses: 

1st course --> Melon and cucumber chilled soup with mint and red chilli flakes. 

2nd course --> Kimchi okonomiyaki -savoury Japanese pancake- with aioli, spring onion and miso BBQ sauce. 

3rd course --> Fresh tortelloni with turmeric and matcha dough, cheesy artichoke filling, porcini mushroom "butter" sauce, grilled veggies, lemon zest and black olive powder.

Dessert --> Raw chocolate cake with vegan dulce de leche, wild edible flowers and berries. 

All dishes are vegan and plant-based, seasonal as much as possible, low in fat and 100% sugar free. Everything is homemade -from the pasta, to the sauces since we believe in the power of clean food -without preservatives, additives and E-numbers.
