Cocina Siciliana de Temporada

Las recetas sicilianas más conocidas están basadas en las hortalizas que solemos consumir en verano (berenjenas, pimientos, tomates, albahaca) ya que, debido al clima de la isla, estas se encuentran a lo largo de casi todo el año. Pero en este taller conoceremos una cocina deliciosa basada en lo que nos ofrece esta temporada en que aún tenemos disponibles los frutos de invierno y, a la vez, empiezan a aparecer las primeras hortalizas de primavera.

EL MENU

Ensalada de naranjas e hinojo con aliño al ajo tierno
Tomate seco aliñado con alcaparra de Pantelleria y orégano fresco
Caponata de alcachofa en agridulce
Bavette de trigo duro con pesto de pistacho de Bronte, calabaza y Ricotta salada
Penne rigate con crema de brócoli, aceituna negra horneada y almendra tostada
Biancomangiare de almendra, zeste de limón y chocolate de Modica a la sal

Prepararemos tres entrantes: Una ensalada de naranjas, en una de sus versiones más sabrosas
Tomates secos aliñados con alcaparras y orégano fresco
Caponata de alcachofa, una versión invernal de la más clásica a base de berenjena

Luego prepararemos dos platos de pasta (¿cómo puede faltar la pasta en un menú siciliano?). Usaremos Bavette (una pasta larga) para condimentar con un pesto de pistacho que prepararemos en el momento y calabaza horneada. A este plato le podemos añadir Ricotta salada de oveja, un queso curado especialidad de la zona más interior de Sicilia (por supuesto, prescindible para una versión vegana).

El segundo plato de pasta será una especialidad muy tradicional de la cocina de invierno siciliana: Penne con crema de brócoli, aceituna negra y almendra, con un toque crujiente de pan rallado tostado.

Completaremos el menú con un delicado postre, el Biancomangiare de Almendra. Lo prepararemos partiendo de una leche de almendra casera y le daremos un toque fresco con ralladura de limón y crujiente con chocolate de Modica a la sal.

Este taller es apto para veganos (con excepción de la ricotta salada que cada uno añade al final en su propio plato, si quiere). Si tienes alguna intolerancia o alergia, pero quieres participar en el taller, por favor coméntamelo e intentaré adaptar el taller a tu situación.

La sesión incluye todos los ingredientes, los materiales necesarios, una ficha con las recetas, una comida abundante, vino y agua.

El taller se hará en castellano y se puede traducir al inglés.

The Taste of Georgia, New Season

Taste of Georgia' is back with new recipes, and this our first event of 2019!

Get a taste of the Caucasus with a special 3-hour brunch where we’ll teach you how to prepare simple and delicious dishes, followed by a tasting of wines from the cradle of viticulture.

In recent years, more and more people have become aware of the rich culinary tradition of this mountainous region of Eastern Europe, for centuries a gateway between east and west. Georgian native Lile will tell you about her home country, famed for its unique spices, healthy but tasty vegetable based pastes and other exotic dishes.

MENU

You will learn how to make 2 typical Georgian starters and a main course.

We’ll also prepare the secret weapon of Georgian cuisine, the spice mix known as Khmeli-Suneli, getting your own mix to take home.

Last but not least, we’ll try Georgia’s mouthwatering cheesebreads, Khachapuri.


WINES

Once the cooking is out of the way, Barcelona based sommelier and wine consultant Nika will introduce you to the world of Georgian wines, one of, if not the most ancient wines made in the world. We’ll be tasting:

• 1 white, aged in traditional terracotta kvevri pots
• 2 different styles of reds, made with local grape varieties

Originally from Georgia, Lile Sekaniya is a qualified yoga instructor & international wellness events organizer, interested in how food affects our moods and wellbeing. She also comes from a long line of cooks, and is likely to regale you with stories about her Grandma.

Nika Shevela is a sommelier, wine communicator and consultant originally from Rostov in southern Russia. With years of experience in languages and tourism as well as an impressive knowledge of Spanish and international wines, she’s the perfect and affable guide to the wonders of Georgian wine.

Cocina Sostenible: Pizza Auténtica Minimizando los Residuos

En este taller vamos a aprender a preparar una verdadera pizza de masa madre.

Empezaremos con un poco de teoria sobre las harinas que hay que utilizar, el aceite y el agua, donde comprar los ingredientes, utilizando menos plástico posible, los tiempos de fermentación y de cocción. 

Aprenderemos como preparar y mantener la masa madre.
Para luego "mettere le mani in pasta" y que cada uno prepar su propia pizza.

También prepararemos algunas salsa y os enseñaremos como hacer un cremos queso ricotta, que le darà un toque especial a la pizza.

La clase estará impartida por los cocineros Alberto (Italiano) y Ella (Australiana) de Bear on Bike. Con un enfoque en ´slow food´ usando ingredientes locales, de temporada y ecológicos, y trabajando hacía una cocina sin desperdicio..

El curso incluye todo el material, más un kit de pizza:

This workshop is for everybody who wants to learn how to prepare a sourdough pizza from scratch.

The workshop has a theoretical and a practical component, where we explain which flours to use, how to buy in a sustainable way the ingredients, using as less as plastic as possible, the cooking times and other tips so as each participant will prepare their own pizza and starter.

We also going to cook some sauce and a homemade ricotta cheese to make the pizza delicious.

The class will be lead by cooks Alberto (Italian) and Ella (Australian) of Bear on Bike. With a focus on ´slow food´, they use local, seasonal and organic ingredients, and work towards a no-waste kitchen.

Mike from Umami Barcelona is back again with his monthly VEGAN PASTA MASTERCLASS! The masterclass has been such a hit and we enjoy doing it so much that it is starting to become a monthly event! :)

Mike is a traditionally trained vegan chef. Mike started his career at Jamie Olivers Fifteen where he learnt how to cook all sorts of Italian classics and more importantly where he fell in love with the art of fresh pasta making.

Nearly 8 years later and Mike is rediscovering his love for fresh pasta making, taking all that he has learnt in the many different styles of cuisine he has worked in since then.

¿Te gustaría aprender a preparar un auténtico risotto italiano? ¿Sabes prepararlo pero te falta saber cómo conseguir que resulte cremoso y meloso, sin añadir mantequilla y queso Parmigiano?Prepararemos tres risottos de temporada que disfrutaremos juntos con una copa de vino. Hablaremos de las diferentes variedades de arroz que podemos usar, del paso a paso (incluyendo opciones veganas), los trucos para conseguir el risotto perfecto.

El primero será un clásico Risotto Cremoso de Calabaza con queso Gorgonzola, romero y avellana tostada. El segundo lo preparamos con un arroz Bomba, alcachofa en tres texturas, aroma de limón y aceite de perejil. Obtendremos esa agradable textura cremosa sin usar ni mantequilla ni queso.

El tercer plato mostrará cómo usar otros granos, como la cebada y la espelta, para preparar un plato con la misma textura cremosa y espesa de un Risotto. AUTHENTIC ITALIAN RISOTTO MASTERCLASS

Would you like to master the authentic italian risotto? Are you able to prepare a good one, but don’t know how to get that creamy and velvety result, without using butter or Parmigiano?

We will prepare three seasonal risottos which we then sit down to enjoy together with a glass of wine. We will talk about the different types of rice you can use, the steps for preparation (including vegan options), tips and tricks for a perfect one.

The first one will be a very classic Creamy Pumpkin Carnaroli Risotto with Gorgonzola cheese, rosemary and toasted hazelnuts.

The second Risotto will be prepared with a local Bomba Rice, artichoke in three textures, lemon flavour and parsley oil. We will obtain the typical nice creamy and velvety Risotto without using butter or cheese.

The third course will show you how to use other grains such as barley or spelt to prepare a Risotto- like plate, with the same thik and creamy result. In Italy we call it Orzotto when prepared with barley, or Farrotto when made with spelt. You will be surprised how tasty it can be.

Liz Kalnin of Thai Together and a Chiang Mai native, will explain the unique blend of flavours that characterize Thai food, and how balancing tastes is at the heart of Thai cuisine.

At this workshop I will share with you all of the steps that contribute to creating a well balanced, healthy vegan ramen, FULL of delicious umami goodness!

*How to flavour your ramen with miso and soy (tamari) and a few other secret ingredients ;)
*How to achieve a rich flavour without using animal products

The Taste of Georgia, New Season

'Taste of Georgia' is back with new recipes, and this our first event of 2019!

Get a taste of the Caucasus with a special 3-hour brunch where we’ll teach you how to prepare simple and delicious dishes, followed by a tasting of wines from the cradle of viticulture.

In recent years, more and more people have become aware of the rich culinary tradition of this mountainous region of Eastern Europe, for centuries a gateway between east and west. Georgian native Lile will tell you about her home country, famed for its unique spices, healthy but tasty vegetable based pastes and other exotic dishes.

MENU

You will learn how to make 2 typical Georgian starters, Pkhali and Badridzhani and a main course, Chicken Kharcho.

We’ll also prepare the secret weapon of Georgian cuisine, the spice mix known as Khmeli-Suneli, getting your own mix to take home.

Last but not least, we’ll try Georgia’s mouthwatering cheesebreads, Khachapuri.


WINES

Once the cooking is out of the way, Barcelona based sommelier and wine consultant Nika will introduce you to the world of Georgian wines, one of, if not the most ancient wines made in the world. We’ll be tasting:

• 1 white, aged in traditional terracotta kvevri pots
• 2 different styles of reds, made with local grape varieties

Originally from Georgia, Lile Sekaniya is a qualified yoga instructor & international wellness events organizer, interested in how food affects our moods and wellbeing. She also comes from a long line of cooks, and is likely to regale you with stories about her Grandma.

Nika Shevela is a sommelier, wine communicator and consultant originally from Rostov in southern Russia. With years of experience in languages and tourism as well as an impressive knowledge of Spanish and international wines, she’s the perfect and affable guide to the wonders of Georgian wine.

Have you ever had the desire to learn how to make these wonderful fermented foods at home only to be put off by how difficult and complicated they can seem to be? ferments weren't alive and taking off or they were confused about the process or worried constantly that something was going to go wrong!

Then this workshop is for you!

I have spent the last few years of my life as a chef experimenting with fermented foods... from Kimchi, to Kombucha to Sourdough bread, Sauerkraut, pickles and vegan cheeses. I found fermentation to be very simple, and thats exactly what I want to transmit to those willing to learn!

During this workshop you will learn how to make:
•Sauerkraut with beetroot and cabbage.
•Kimchi (VG). and
•Fermented cashew cream cheese + how to flavour them.

We will finish the workshop with an abundant tasting of all of the above on HOMEMADE AREPAS! (a delicious South American corn bread). You will not leave hungry.

Manila de Verdeverdementa nos propone un ciclo de talleres de Cocina Italiana Natural, basada en ingredientes de origen vegetal, de temporada y de proximidad. Utilizaremos algún queso artesanal, cuando la receta lo requiera (prescindible para veganos e intolerantes). Una manera original, sana y divertida de combinar cereales y harinas, legumbres y hortalizas, fruta, frutos secos, aromáticas, plantas y flores silvestres.

Manila es italiana, de origen siciliana, nacida en Holanda. Vive en Cataluña desde hace 15 años. En la cocina se mueve desde la intuición, el respeto por los ingredientes y la creatividad. Le apasiona experimentar y jugar con aromas, texturas y colores, para crear platos originales. DYE & DINE - A Natural Dye Class and Dinner.

On Sunday the 9th of December from 17.00 - 22.00 Bear on Bike and Marble Matter invite you to explore the relationship between dyeing and dining. 

Traditionally most food scraps have been used to give textiles beautiful color. Trying to shed light upon this circular approach to waste, we have created an event where you will dye tableware using the food scraps from the the dinner you will later enjoy. 

The Natural Dye Class

We start the afternoon with a two hour natural dye class. You will learn the basics of natural dyeing and where to source dye stuff in your local environment. During the class we will work with onion, avocado and pomegranate, each ingredient representing a dish from the dinner menu. Using the peels and pits we will create natural colors and patterns on two raw silk table mats and one small table runner. 

The Menu

After we finish the workshop you can relax while enjoying a three course meal accompanied by wine, all prepared by the great chefs Ella and Alberto from Bear on Bike. (Menu details will be posted soon).
